Made exclusively from the milk of a single herd of Friesian cows in Spain's La Rioja region, Queso Añejo showcases the remarkable complexity that can be achieved through careful aging and exceptional milk quality. Inspired by Señorio de Cameros' acclaimed sheep's milk cheeses, this unique cow's milk wheel is matured for a full year in underground caves, where it is regularly rubbed with olive oil to encourage even aging.
